@his brewery's sake, with its briskness, fragrance, and deep flauor, is widely recognized as one of the local sakes of the northeast. Made with the notion that "food should be medicine and medicine food," we use organically grown local rice and expose it for one week to negative lons, a process which neutralizes any harmful chemicals that might remain from acid rain. The Water used in the rice-washing and brewing pracess is spring water that has been put through an ultra-high frequency magnetic separator, which eliminates any dioxin or other environmental pollutants. With the motto "earth-friendly and healthy" in mind, our master brewer produces a sake that is representative of tradition, history and civilization.


The name of this sake originates from a song that was popular during the times of the Date fief :"The pride of our land is the sumo wrestler Tanikaze and the fashion of the Date men."
